...A significantly powerful alchemist could forge souls into something else, but that's-- different. People have to die for that to happen, since natural deaths lead to the souls of the dead passing through the Gate.

That is what I understand souls to be, too. Though natural deaths...it does not matter, for us. And one is enough to do so much...but I do not think I will have another chance to attempt that here.
It is said that a human could take a monster's soul as well, under the right conditions.
